This term is used for the small casks (225-litre barriques and 450/500-litre tonneaux), reserved for the refinement of Conti Sertoli Salis’ most important red wines. Over 600 of these carati lie in the cellars of Palazzo Sails.

All the casks are made of European oak (quercus sessilis) – over 500 of them from the much-prized oak grown in the forests of central France.

These wine casks play a very important role in the ageing of great wines, permitting the gradual and moderate micro-oxygenation which, favoured by the constant cool temperature of our centuries-old cellars, allows the combination of polyphenols and the harmonization of the noble tannins of the Nebbiolo grape.
